This honey is produced by artisan beekeepers on the Lasithi planes of Crete. Each spring, the bees are moved to the central planes to forage on the pine trees which grow in abundance. The resulting honey is cold extracted with zero heat treatment, therefore maximising the flavour and health properties of the nectar and pollen.
